The ideal companion for garden vegetables, the prolific and durable Garden Oyster Mushroom (Hypsizygus ulmarius), is able to unlock the nutrients from woody materials such as sawdust, wood chips, straw and even garden debris, while simultaneously feeding the roots of the adjacent plants through the process of symbiosis. Mycelia may be planted between March and October in the northern latitudes (or any time the ground is not frozen solid), while in the Southern latitudes inoculation can take place year round. A great time to do it is during your mulch or straw applications. This is definitely one of the easier mushrooms to cultivate in the outdoor garden – without the need to prep logs and dowels. Also called the White Elm Mushroom, this species is native to the Eastern US and likes humid, cool conditions when fruiting. Over the last decade, Hypsizygus ulmarius is becoming well known in medicinal circles for its immune-enhancing and cancer-protective properties, as well as for its ability to reduce inflammation when applied to the skin.
